If you’re fed up with slimming world breakfast muffins being the only thing you find when you search for slimming world muffins, have no fear! These slimming world lemon muffins are the thing you need to help you on your slimming world journey!
Slimming world snacks can be few and far between, which is why I’ve started making my own. I don’t see the point in paying out £12 for a box of slimming world friendly muffins when I can spend less than £3 making 12 of my own using a healthy muffin recipe!
This slimming world muffins recipe is super easy to make, takes hardly any ingredients and takes no time at all. It’s similar to a slimming world lemon drizzle cake but in muffin form, literally, they’re amazing and you won’t be able to get enough!

You might have seen I’m playing around a lot more with slimming world snacks and slimming world desserts. I’ve written a post on low syn slimming world snacks before but they’re all shop brought and I think it’s a lot more fun if you make what you eat yourself.

These slimming world lemon curd muffins have a nice sweet lemon taste, although it’s not overpowering. I will say that you need to be careful what lemon curd you buy as some of them can be full of syns and need avoiding. You can make your own and if you use that in the recipe, it is less syns in the muffins.
How To Make Slimming World Sweet Muffins
I have said before that making savoury slimming world muffins is fine and they taste amazing. I like my sweet treats and that’s why I like making sweet slimming world recipes and this is how I make sweet slimming world muffins.
You need to make sure that the muffin mix is well mixed. You will have some lumps of lemon curd left in the mix and that’s okay as it will melt in the oven and gives the lemon muffins such a great taste! I like using top quality lemon curd but everyone has their own preference.
I’ve heard these mentioned as lemon drizzle fairy cakes or slimming world lemon drizzle cupcakes. I say no, I like to make big lemon muffins and you could say they’re a bit like the Costa lemon muffins that taste so good.
If you are looking at making a Costa lemon muffins recipe, this is the best one. However I will say you need to have the fancy muffin cases, they might cost a bit but they’re well worth it trust me! They look so professional and everyone will love them!
Slimming World Lemon Drizzle Muffins Recipe
Although these aren’t traditional lemon drizzle muffins, I will say you can easily make them into just that. I personally feel that there’s more than enough lemon in these but if you want you can always add lemon zest to give it a powerful flavour kick and a little more texture.
I will say that the syrup you put on once they’re cooked is the most important part and gives them the most flavour. Make sure you poke the muffins with a handy cake testing skewer as it will help the syrup to really penetrate the muffins.

So I’m not going to lie, if you’re looking for a syn free slimming world cake recipe this isn’t it. These are a total treat and something you can enjoy at the end of the day when you have slimming world syns to spare.
Each one of these amazing lemon muffins is going to set you back 9 syns. I know that sounds like a lot but they’re well worth it and like I mentioned if you have one at the end of the day it’s the ultimate slimming world treat.
I’m all about budget food as well. These cost hardly anything to make and that’s one of the best things, low cost slimming world muffins for the win right? All you might have to do is buy expensive equipment but that’s up to you.

Muffin
- 150 g Self Raising Flour
- 115 g Low Fat Spread
- 2 tbsp Sukrin:1
- 2 Eggs
- 2 tbsp Slimming World Syn Free Lemon Curd
Syrup
- 6 tbsp Lemon Juice
- 2 tbsp Sukrin:1
Instructions
For the Muffin
Preheat oven to 180°C, 400°F, Gas Mark 6
Add all of the ingredients into large bowl and mix until it is all combined.
Once the mixture is combined, spoon into 6 muffin cases.
Put the muffins in the oven for 15 – 20 minutes, or until a skewer comes out clean when inserted into the middle of the muffin.
For The Syrup
Add the lemon juice and sweetener into a small pan and heat through gently until the sweetener has dissolved and the syrup has gone a little thick.
Once the muffins are out of the oven, use the skewer to make holes across the top of the muffin, be careful not to damage the muffin.
Now brush the muffins with the syrup and leave them to cool and the syrup to soak in. For best results, leave the muffins overnight.
