All the best Greek favors come together in this EPIC cheesy quesadilla, topped with an easy homemade Greek yogurt tzatziki sauce!
Butters and I have basically locked ourselves in our houseduring this LA heat wave, sipping on these, while also trying to figure out the appropriate tzatziki sauce-to-quesadilla ratio.
I’m not going to lie – it took some time to get the perfect set of measurements just right to ensure that each quesadilla has enough sauce to go around.
But sometimesI get carried away with my dipping practices and there’s just not enough for the last few slices.
Or maybe I just solve everyone’s problems here and double it.

Ingredients
- 8 8-inch flour tortillas
- 1 10-ounce packages frozen chopped spinach, thawed and drained
- ½ cup julienned sun dried tomatoes in olive oil, drained
- ½ cup chopped pitted kalamata olives
- 1 cup shredded mozzarella cheese
- 1 cup crumbled feta cheese
- 1 tablespoon fresh dill
For the tzatziki sauce
- 1 cup plain Greek yogurt
- 1 English cucumber, finely diced
- 2 cloves garlic, pressed
- 1 tablespoon chopped fresh dill
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon chopped fresh mint, optional
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil
Instructions
To make the tzatziki sauce, combine Greek yogurt, cucumber, garlic, dill, lemon juice, lemon zest and mint in a small bowl; season with salt and pepper, to taste. Drizzle with olive oil. Refrigerate for at least 10minutes, allowing the flavors to meld; set aside.
Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
Top tortilla with spinach, sun dried tomatoes, olives and cheeses, and then top with another tortilla. Repeat with remaining tortillas to make 4 quesadillas.
Place quesadillas onto the prepared baking sheet. Place into oven and bake until the cheese has melted, about 8-10 minutes.
Serve immediately with tzatziki sauce, garnished with dill, if desired.

I made this last weekend and it was amazing! My eldest absolutely loved it while my youngest said it had a lot of flavors going on. She was the only one that didn’t love it, so I will fix it when she’s not home. This was easy to make and fast to prepare as well! I can’t wait to make it again! Very flavorful!

I have already made this recipe twice and we loved it. We do not like olives, so I replaced the olives with Roasted Red Peppers. I also added chicken breast that I cut up into small chunks and sauteed using Olive Oil, garlic powder, onion powder, and Oregano. Once the chicken was done, I chopped it up and added it as the middle layer on the Quesedilla. I’m going to make it next time exactly as it was written (minus the olives). I know it will be great. Now, I’m going to look for your other recipes. Thank you.

YUM!! This is SO good! Super easy and quick to make. Light but filling. The tzatziki sauce is really tasty We did substitute with dry seasonings first time, so I’m sure the fresh herbs would make for even more of a pop of flavor. We added some rotisserie chicken to our quesadilla as well. Will be eating this again soon!

Yes, I did! I didn’t feel like thawing a pkg – and had fresh! I just layered it on the bottom then added the rest on top!

Wow. This is a REFRESHING dish. Delicious and it has become one of my favorite dishes to cook for my little family (wife and daughter). My wife loves it, in fact it’s the first dish I ever cooked that she specifically asked for me to cook again. Thank you! Quick, easy and there are always leftovers which are easy to take to work, reheat and eat. Double thumbs up. We usually cannot eat dairy because we are lactose intolerant but I did not have any problem getting up from the dinner table and doing my nightly 3 mile walk.

-
Bob — December 6, 2020 @ 8:44 AM Reply
I always use fresh spinach but I cook it down first in a frying pan or skillet. Just add it dry to the pan on medium low heat and let it wilt rather than fully cook. Use WAAAY more than you think you will need and that will still probably not be enough. It shrinks down to nothing.

Not quite sure how to read this comment, Angelina. I’m going to assume you didn’t mean this in the way it reads. This is a fusion dish – it’s Greek quesadillas so we used Greek flavors in an otherwise Mexican staple. Does that make sense?
Glad you still enjoyed your version! #spreadkindness

I guess I’m a purist – I like my tzatziki, but not with lemon zest and without the dill (to each their own). Another easy hit, Chungah! Thanks for sharing…I’m waiting patiently for the beginning of September for my copy of your book!
